Dinner in Dalaran: GGsGuy’s Chicken and Rice

Alrighty, inspired by a Twitter bestie, @AlletatheMage, and a fond remembrance of college days long past, this super easy dish came to mind. I’m reasonably sure that at some point, every WoW gamer worth their salt, has spent a decent chunk of time at “Dalaran University”.
Just when we thought we had our Warcraft career on track, Blizzard sends us up to the floating city for our tenure alongside the enemy. Gasp!
Now there were new PvP and PvE trinkets and armor sets, faction related swag, and even expensive, I mean, epic mounts for sale. In my own mad dash to 85, and now 90, I always seem to push professions to the side.

Translation: I was broke.

We all split the ramen noodles in half during our college time, so I give this comfort food that is cheap and tastes great for those of you still in college or about to go in.

Ingredients
3 Tbsp Olive oil
1 lb Chicken breast, bite-sized pieces
1 Cup Onions, sliced and diced
1 1/2 cup White rice
2 1/2 cup Chicken stock (or water)
1/2 cup White wine
Salt and pepper
Lemon wedges
Fresh parsley for garnish

Directions
Bring stock to medium boil.

Heat olive oil in a large skillet medium-high heat. Add chicken pieces and onions. Season generously with salt and pepper. Squeeze juice from 1 lemon wedge. Sautee on high for 10 mins.

Deglaze with white wine being sure to get all the brown bits.

Stir in uncooked rice mixing thoroughly. Cook 5 mins.

Add boiling stock. Stir well. Cover and reduce heat to medium.

Cook 20 minutes, until all liquid is absorbed and chicken is fully cooked through.

Remove from heat and fluff rice if needed.

Garnish with parsley and serve with lemon wedges.
