Okay. I know this is not exactly a quick meal to fix, but trust me. You’ll be glad you took the 30 minutes or so to prep this meal. You’ll still have plenty of time for your raid(s), guild meetings, changing the litter box, or even finding your pants.
They say the proof is in the pudding, but it all starts with the prep.
Let’s find those pants,
1/3 cup Olive oil
1 3lb Boneless beef chuck roast
2 Large onions, quartered
2 cups Celery stalks, thinly sliced
2 cups Carrots, thinly sliced
3 Garlic cloves, minced
1 6oz. can Tomato paste
1 cup Dry red wine
2 cups Mushrooms, thinly sliced
1 Tbsp Kosher salt
1 tsp Dried oregano
1 can Whole peeled tomatoes, chopped, liquid reserved
Heat the oil in a large skillet over medium-high heat and brown the roast on all sides.
Transfer the roast to a 4- to 6-quart slow cooker, leaving the rendered fat in the skillet.
Add the onions, celery, carrots, and garlic to the skillet and cook until tender.
Stir in the tomato paste transfer all to the roast.
Deglaze the skillet with the wine and add to the roast.
Add mushrooms, salt, oregano, tomatoes, and 1 cup of tomato liquid.
Cook 8 hours on low, or 4 hours on high.
Serve pot roast over mashed potatoes or pasta and feast while regaling your successful raid planning!
